HOW TO SERVE DRINKS AND TAKE A FOOD ORDER

TASK NUMBER:   BAR-04
DEPARTMENT:     F&B – Bar /Night Club
Why is this task important for you and our guests?
Answers:
1.    To maximize the guest satisfaction
2.    TO be professional in the delivery of personalized service at all levels of interaction.

 STEPS    AND    STANDARDS
1) Approach the guest.   
Go to the guest table by carrying the drinks on a tray. Carry the tray with confidently and approach the table.
2) Present the drink.
Stand by the right side of the guest with right leg slightly in front.Hold the stem/base of the glass; place the glass on the right side of the guest, above the tip of the cutlery.
3) Leaving the table.
Say “Mr./Mrs./Ms./Sir/Madam XXXX, this is your ………..(name of the beverage), please enjoy it” with a smile.

Answers:
1.    To maximize the guest satisfaction
2.    TO be professional in the delivery of personalized service at all levels of interaction.                                

STEPS    AND       STANDARDS
1) Approach the table to take order.   
Approach the guest table and stand in a position that have eye-contact and communication and say, Mr./ Mrs./ Ms./ Sir/ Madam XXXX, would you like to try a snack from the snack menu to accompany your beverage?
2) Suggestive selling.
Look at the guest with a friendly smile, stand upright and lean the body forward a little bit.Recommend snacks from the menu.Repeat the order to guest after written in order pad.  Speak to the guest slowly, clearly and politely.
3) Set the table.   
After orders have been computed in the POS system, cutleries have to be laid according to the guest’s order from the right side.

1) Serve tit-bits to the guests.
Once the guests order beverage and you print it through POS, you get to bar counter pick up beverage with the tit-bits together.There is no charge for these snacks.One container of snacks is usually provided for one table.

What are SOPs?

SOPs, more formally known as standard operating procedures, are documented practices designed to ensure consistency in business practices and operations. Many people think of SOPs as only applicable in hands-on laboratory and manufacturing contexts. According to the Environmental Protection Agency, one of the main goals of SOPs is mandating how equipment is maintained, adjusted and used. However, SOPs can also cover more analytical processes, meaning that they can be applied in a variety of business contexts.
A Standard Operating Procedure (SOP) is a document dictating a set of explicit instructions to successfully accomplish a specific goal. SOPs are intended to be followed without deviation, and provide all the required details and decision branches required to perform a given procedure.
Meaning
o    SOP stands for "standard operating procedure."
Features
o    An SOP includes step-by-step instructions for completing a specific task.
Significance
o    SOPs are useful when a specific process must be followed every time a task is performed.
Potential
o    A written SOP will allow a person who is unfamiliar with the task to fill in. If an employee quit with no notice, the SOP would help another employee complete that person's work.
Warning
o    An SOP should only include instructions for one task. Overloading an SOP with irrelevant information will make it difficult to use.
Expert Insight
o    While it takes time to write an effective SOP, it will increase efficiency. Employees who follow an SOP will not miss important steps in a process

HOW TO APPROACH THE TABLE TO SERVE DRINKS

3.    To ensure the table is approached in a courteous manner

STEPS    AND  STANDARDS
Pick up the drinks
Go to the bar and collect the beverages from the bartender.Bring all the require condiments as well. E.g. linen napkin, tidbits, etc.

Approach the table
Walk towards the table. Don’t walk too slow and not too fast either.Walk straight up,keeping an eye on the table where you are going to and at other tables at the same time.When at the table, say: “Excuse me sir / madam or Mr. / Mrs. XXX, here is your drink order”Kneel next to the guest you will serve the drink and serve the beverages accordingly.Older ladies first, followed by younger ladies, male guest and the host as last.

Leave the table
Thank the guest.Say: “Thank you, enjoy your beverages”

2.    To ensure the guests are quickly attended to without too much disturbance

STEPS     AND      STANDARDS
1) Prepare the service
Collect the drinks from the bartender.Place the drinks on the non-slip tray together with tit-bits, a coaster and a linen cocktail napkin.For tit-bits service see SOP 08

2) Approach the table.
Go to the guest table by carrying the drinks and tit-bits on a tray.
 
3) Present the drink.
Stand by the right side of the guest with right leg slightly in front and kneel next to the table and say “Mr./Mrs./Ms./Sir/Madam ..., here are your beverages.Place the coaster in front of the guest. Hold the stem/base of the glass and put the glass on top of the coaster and out the linen cocktail napkins on the right hand side of the beverage.Say “Mr./Mrs./Ms./Sir/Madam ...., this is your ..... (name of the beverage), please enjoy it” with a smile and an open palm pointing to the beverage.

4) Leaving the table.
Quietly back off away from the table, keeping your eye on the guest to ensure they are able to catch your attention should they require anything else.Smile if there is eye contact when you back away from the table.
